Combine the diced strawberries and diced mango together in a small bowl and stir until well-mixed. Set aside.
In a medium-sized mixing bowl, mix the Krusteaz Protein Pancake Mix and milk until well-blended. Add the zest of 1 lemon or 1 tsp of lemon oil and stir.
Gently pour the batter (4 - 6 small pancakes) onto a hot griddle. Let sit until bubbles form along the edge of the pancake (about 1 minute), flip and cook the other side.
Serve topped with the strawberry mango salsa. Drizzle with a fruit syrup or honey, if desired.
