I’m a sucker for stuffed peppers, especially mini stuffed peppers. They are the perfect bite-sized snack or appetizer and you can have them ready to eat in like 10 minutes. We’ve been working out lately and trying to focus on improving our health which includes eating a lot more fruits and veggies. These mini feta and herb stuffed peppers have become one of my favorite go-to snacks.

I make these as a side dish pretty frequently too, at least once a week. Between Brandon and I we can eat an entire bag of mini peppers when they are stuffed like this.

If you’re making these mini stuffed peppers as an appetizer I recommend making 2 per person and having a couple extra just in case. These are always popular and a little addictive. Plus, they are easy to eat since you can pick them up with your fingers and they don’t drip or ooze anywhere. They are just crunchy delicious goodness (and I’m sucker for feta cheese and fresh herbs).

To make these stuffed peppers, just slice off the top of the pepper and stuff ’em with the feta filling. Mini peppers don’t usually have seeds in them but if they do, remove the seeds. Leave the end with the stem intact so the filling stays stuffed inside and they are easy to pick up and eat.

All you need to make these are a couple mixing bowls and a baking sheet so they seriously couldn’t be any simpler. They take about 5 minutes under the broiler and they are ready to eat. They are quick and easy with minimal mess but can easily be dressed up to look fancy if you want to dress them up for a party.

Mini Feta and Herb Stuffed Peppers

These mini feta and herb stuffed peppers are the perfect healthy snacks or appetizer for your next gathering.

Ingredients

Feta Mixture

  • 1/2 cup feta cheese crumbled
  • 1/4 cup sour cream
  • 1 tsp garlic minced
  • lemon zest
  • 1/2 tsp parsley
  • 1/2 tsp oregano
  • 1 green onion finely chopped
  • 2 tbsp black olives finely chopped
  • salt and pepper to taste
  • 1 tsp extra virgin olive oil

Mini Peppers

  • 1 lb mini sweet peppers (about 1 bag)
  • 1 tsp extra virgin olive oil
  • 1/2 tsp salt

Instructions

  • Preheat your broiler.
  • Leaving the stem intact, cut the ends off the peppers and remove any seeds, if needed. In a medium bowl, drizzle the mini peppers with olive oil and sprinkle with salt. Toss to coat. 
  • In a separate bowl, combine the feta cheese, sour cream, garlic, lemon zest, parsley, oregano, green onion, black olives, salt, pepper, and olive oil. 
  • Use a teaspoon, gently fill each mini pepper with feta mixture. Fill to the edge. Place the peppers in a single layer on an ungreased baking sheet.
  • Place the baking sheet under the broiler and broil for 5-7 minutes until mini peppers are tender and lightly charred.
  • Serve immediately.
