Sharing that hash brown casserole recipe last week really got me in the breakfast mood and since National Pancake Day is coming up I thought I’d drop in with one of my favorite pancake recipes for spring – lemon pancakes with strawberry mango salsa! It’s still cold but I know spring is coming soon and I’m so ready for it. This recipe is fresh, light, and vibrant which is exactly what I need to remind me that days full of sunshine and flowers are coming soon.
For these lemon pancakes, I used Krusteaz Protein Pancake Mix as the base for my pancakes and mixed in the lemon flavor using lemon zest. Krusteaz has been one of my go-to baking brands for years and their mixes make breakfast so much easier, especially during the week when those morning minutes are precious as I’m trying to rush out the door for work.
To save time during the week, you can prep the strawberry mango salsa the night before so that in the morning all you need to do is grab your mix, add some lemon zest or lemon oil, and pour the batter on the griddle. Breakfast takes like 5 minutes.
This Krusteaz Protein Pancake Mix is so easy to use that it can be made simply by adding water. Each serving has 15 grams of protein, 4 grams of fiber, and is made from 100% whole grain flour but if you want to increase the amount of protein in your pancakes, you can also use milk or milk + egg (the adjustments needed are on the back of the box). If I’m going to hit my 5k goal this year I know that I need to up my protein intake so on the weekends if I know I’m going to the gym or otherwise going to be really active I’ll make them with milk and an egg. During the week I use water so I can get them on the griddle quickly.
The first time I ever made these lemon pancakes with strawberry mango salsa was for a special celebration at home. I made them while Brandon was walking the dogs and when he got back he thought I’d worked so hard on them, haha. They were so light and fluffy and the strawberry mango salsa on top just sets them off beautifully. If you’re ever looking to impress someone in the morning (breakfast in bed, hosting brunch, overnight company) definitely make these. I promise they’ll be a hit.
Lemon Pancakes with Strawberry Mango Salsa
- 8-10 strawberries diced
- 1 medium/large mango diced
- 1 cup Krusteaz Protein Pancake Mix
- 2/3 cup milk
- zest of 1 lemon
- Combine the diced strawberries and diced mango together in a small bowl and stir until well-mixed. Set aside.
- In a medium-sized mixing bowl, mix the Krusteaz Protein Pancake Mix and milk until well-blended. Add the zest of 1 lemon or 1 tsp of lemon oil and stir.
- Gently pour the batter (4 – 6 small pancakes) onto a hot griddle. Let sit until bubbles form along the edge of the pancake (about 1 minute), flip and cook the other side.
- Serve topped with the strawberry mango salsa. Drizzle with a fruit syrup or honey, if desired.
