There are so many reasons to celebrate February; it’s Black History Month and we have Valentine’s Day and President’s Day but did you know it’s also National Hot Breakfast Month? Its purpose is to encourage families to prioritize eating a hot breakfast every day. We are lucky enough to both be able to work from home so breakfast isn’t an issue anymore but I remember when it was almost impossible to squeeze it in every morning. One of our favorite go-to’s for a quick breakfast has always been Krusteaz baking mixes. With the Krusteaz waffle mix and my favorite waffle iron, I can have breakfast on the table in less than 10 minutes.
Our favorite way to enjoy breakfast is actually having breakfast (for dinner) in bed. Having breakfast for dinner has come up before on our Facebook page so I know we’re not alone in that. A few years ago we ended up spending Valentine’s Day night at home enjoying breakfast in bed (for dinner) watching movies. We set up breakfast trays, loaded them up with waffles, bacon, and coffee, and binged on Star Wars. We quickly decided we were going to make that a regular weekend tradition and try to do it at least once a month. It’s perfect for lazy evenings.
Last weekend we decided to go with horror movies (we love horror movies) so I chose My Bloody Valentine and Return of the Living Dead. My Bloody Valentine is actually pretty awful but since it’s almost Valentine’s Day I couldn’t resist. Return of the Living Dead is one of our all-time favorite movies and we quote it to each other near constantly. It was actually one of the first “scary” movies we ever watched together and his way of slowly introducing me to the zombie genre. I think it’s meant to be scary but it’s not. It’s hilarious.
Brandon preps the extra blankets, digs out the breakfast in bed trays (see here), and sets everything up while I mix the waffles, cook the bacon, and pour the coffee. Using the Krusteaz mix it takes me less than 10 minutes to get the waffles ready so we’re able to settle in for breakfast in bed quickly. All you need to whip up the Krusteaz mix is oil, water, and eggs so it seriously takes no time at all and they are so good! Sometimes I mix in extras like blueberries, cranberries, or pecans but their waffle mix is good straight from the box which is how I made them this past weekend. I topped them with fresh blueberries, syrup, and powdered sugar and they were perfection!
I enjoy breakfast in bed for dinner especially when it comes with bacon (or veggie bacon for him) and horror movies. #Yum When you’re doing eating, just sit the tray next to the bed and snuggle under the blanket til the movie wraps.

Whatever kind of movie is your thing – rom-coms, horror, drama – pick one or two favorites and settle in with your breakfast trays, a warm blanket, and the remote. It’s one of our favorite simple ways to enjoy time together and relax.
