Am I the only one that feels like wine needs to step aside already? I love it as much as the next girl but lately, I’ve become tired of it. Maybe I’ve just become bored with my go-to favorites or maybe it’s because of this sake cocktail but I’ve wanted something…different. Well, Coopers’ Craft Bourbon reached out and offered me a bottle of their bourbon to try along with a couple of bourbon cocktail recipes they thought I’d enjoy.
I’ve always loved bourbon (guess it’s those Appalachian roots of mine) but I quickly accepted and obviously couldn’t wait to try to their cocktails out. First up was the Bourbon Blackberry Rickey suggested by Cooper’s Craft Bourbon mixologist Michael Ring.

This cocktail recipe from Coopers’ Craft Bourbon is one of their bourbon + bubbles recipes and has the perfect balance of, well, bourbon + bubbles. 😉 The Bourbon Blackberry Rickey is a delicious and unique combination between Coopers’ Craft, a refined toasted wood whiskey which at 82.2ABV has a softer, lighter flavor profile, and refreshing seltzers with fresh fruits.
One of my favorite things about this bourbon cocktail is that it avoids using artificial sweeteners and unnecessary sugars and syrups. By opting for fresh ingredients, this cocktail is better for you so you can enjoy with less guilt which is always a good thing, right?
I’m hoping to get to Kentucky next year to tour a Bourbon facility. It’s literally the next state over so I don’t see any reason other than laziness I wouldn’t do that next year. I’d love to tour a location and sample various bourbons. I suppose that’s a bucket list item I need to add for 2018. I can’t imagine I’d have trouble convincing Brandon to tag along. 🙂
To make this Bourbon Blackberry Rickey you’ll need:
**Please drink responsibly.**
- 1.5 oz Coopers’ Craft Bourbon
- .75 oz Fresh Squeezed Lime Juice
- .75 oz Simple Syrup
- 2-4 oz Sparkling water
- 4 ea Fresh blackberries
- 1 ea lime wheel skewered with blackberry
- In a cocktail shaker, crush the blackberries, then add Coopers Craft Bourbon, lime juice, simple syrup, and fill with ice.
- Shake for 15 seconds to combine and chill.
- Strain into Collins glass, then add ice and top with sparkling water.
- Garnish with Lime and Blackberry skewer and serve with a straw.
- Omit only the bourbon for a delicious mocktail
