I’ve mentioned many times in the past that Brandon is a vegetarian. It was a choice he made after he had surgery in 2014. I still eat meat on occasion but for the most part I eat vegetarian with him, especially at home. One of the easiest things to make which satisfies both of us are quinoa bowls. If I’m really craving meat I’ll add grilled chicken to mine but more often than not the quinoa and other ingredients are usually more than enough.
Pro Tip: Quinoa is good for up to a week after cooking it. Make a big batch on Sunday and use it in quinoa bowls throughout the week. They make great weekday lunches!
Quinoa bowls are ridiculously easy to make. Honestly, you don’t even really need a “recipe” to make one. Just cook the quinoa and throw a mix of veggies, nuts, seeds, sauces, etc on top. Still, people making suggestions about the mix are always helpful. 🙂 Most of these recipes don’t take longer than 30 minutes to prepare and they are so filling! I had to adapt one of them to make it vegetarian for our family but I noted my adaption below the title and the source.
